Jamie Olivers Latest Adventure


Jamie Oliver is back on our TV screens. This time he is touring the USA generally having a good time and hanging out with interesting folk!

If you watch carefully you will see Jamie is using IO Shen knives. I spotted their distinctive handle design when he was chopping Red Onions for the cowboys - if you spot other scenes please let us know.

I'm told by a very reliable source that Jamie is a big personal fan of IO Shen. He doesn’t get paid to use them, its not one of his licensed products but he uses them - not only on TV but in his latest cookbooks.

Age verification

Working with NetIDMe we have successfully trialled and integrated an online age verification system with our website. We are now in a position to age verify any person purchasing knives from our site. The process is seamless and secure ensuring the privacy of our customers without having any negative impact on our sales.

The UK government have been talking about age verification and online sales of age restricted goods and services for many years. The Gambling Act 2006 was brought in to ensure that online gambling companies could be made accountable for any under-age use of their services. The age verification checks needed to be independent of the payment method and so a number of online age verification services became available whereby the details of the customer could be checked against various publically accessible databases, such as the electoral roll.

The pressure is now on for all online retailers of age restricted goods (such as knives, alcohol, tobacco, DVDs and games) to take active steps to ensure that these products are not sold to under age persons. The Online Purchasing of Goods and Services (Age Verification) Bill has had readings in the House of Commons (by Margaret Moran) and House of Lords (by Baroness Massey of Darwen) and has received generally positive comments in both. However, the general consensus is that the existing laws that govern sales of age restricted goods should be enforced online in the same way as they are offline – the retailer needs to take reasonable steps to ensure that they are not selling goods or services to under age people and there is no need to bring in new laws to govern online sales separately. No mean feat as it’s not possible to physically check the photo ID of an online customer in the same way that a high street merchant can!

A few small modifications needed to be made to our online checkout process to ensure that we were gathering customer data in as accurate a format as possible, ready for the age verification process. In this way we can perform the checks and store the customer’s account and delivery details without lengthening the checkout process in any way.

So far we’ve had great results – where an age verification check has failed we’ve been able to follow up with the customer and either correct the details they entered or get additional information so we can perform a further check. For instance, a buyer for a hotel was using a company credit card and so the billing address given was the hotel rather than the purchaser’s home address – once we had the buyer’s details we could confirm that he was over 18. Other customers had failed the checks as they had recently moved – once previous address details were collected we could perform further checks. We’ve also had a couple of orders where the customer failed the age verification check and they haven’t responded to our requests for further information. We’ve placed the orders on hold until they get back to us, but they may have been fraudulent orders in the first place (which we would have picked up on and rejected when we came to process payment) or orders from minors who decided not to try their luck any further. Either way, we’re happy!

So, as more pressure is placed on the online retailer to ensure that they are doing everything possible to stop sales of age restricted goods to minors, we hope that taking the initiative and putting these checks in place will mark us out as a knife retailer with a sense of social responsibility.

Celebrity chef Heston Blumenthal, star of BBC2's 'In Search of Perfection', columnist for the Sunday Times and owner of the Michelin 3 Star restaurant, the Fat Duck Bray, officially endorses the Tojiro Senkou knife range, after he found them to be his favourite knives:

They have also featured on his appearance on Five's motoring show, Fifth Gear. The new Tojiro Senkou range of Japanese kitchen knives and accessories makes centuries of Samurai sword making tradition and expertise accessible to everyone. After testing under laboratory conditions, Tojiro Senkou knives have been found to be one of the sharpest kitchen knife ranges on the market.The specialist manufacturing techniques were developed for the feared Samurai warrior caste, which needed a weapon that would be reliably sharp, strong and sufficiently durable to defend them against repeated danger. Samurai warriors often gave names to their swords and considered them to be the ‘soul’ of their warriorship, so style and character are also key design features.The Mica handle of Tojiro Senkou knives incorporates a naming plate to allow each knife to be personalized.

Damascus Steel
The technique of laminating steel was first seen in Damascus, Syria around 400AD. It was later adopted by Japanese sword smiths who would fold and hammer many layers of steel into their blades.
A perfect blade needs to be hard, but also strong and flexible. In many respects, these features can be contradictory. The cutting edge on Tojiro Senkou knives is made of extremely hard steel (Rockwell 60° - 62°). This allows the knives to be sharpened to a more acute angle and to emerge from the factory razor sharp. If the knives were made solely of this hard steel, however, they would be inflexible and brittle, breaking easily if dropped or misused.
The solution lies in using the process of lamination to cushion the super hard inner core by adding outer layers of softer stainless steel. This results in a knife as flexible and strong as any single layer knife, but with a cutting edge that is harder, sharper and last longer.
Tojiro knives are made of 37 or 63 layers of steel. (Deba knife with 19 layers) This results in the beautiful Damascene effect - a pattern formed by the many layers of steel, which is known in Japanese as "kasumi-nagashi" or "floating mist.

Sharpening Guide for Tojiro Senkou Knives

The cutting edge on the Senkou knives is made of extremely hard steel (Rockwell 60º - 62º). This allows sharpening to a more acute angle and the knives emerge from the factory razor sharp. For safety and best performance Tojiro Senkou knives should be kept sharp at all times.Cooks Knives offers one of the widest ranges of sharpeners on the internet. For professional results we recommend sharpening your Tojiro knives on a whetstone around once or twice a month. After soaking the whetstone as directed, tilt the blade edge at an angle of 10° - 20° to the stone and draw the blade up and down the length of the stone. Whilst sharpening, do not flush away the thick liquid which will form from your whetstone, as this contains the sharpening agent.
After sharpening, your Tojiro knives should be washed in hot water and then dried thoroughly.
